Health Week – Zucchini-Rasin Quick Bread!

Okay, okay. Now I know this recipe sounds yucky, but I promise you it is great amazing to die for! This recipe is one of my favorites! I would eat this bread everyday if I had the option. This recipe is my variation of Rodale’s Basic Natural Foods Cookbooks Zucchini-Rasin Quick Bread.

If you don’t have this book – Get it! It is full of over 1,500 recipes and is the best cookbook I have! It has been passed down from my mom, who got it in 1984, who’s dog then ripped up the binding, so it is held together by tape. We got another edition just in case this one falls apart… The link to get the book will be at the bottom of the page.


2 eggs, beaten

1/2 cup regular apple sauce (try not to get apricot, blackberry, or something like that)

1/2 honey

1 teaspoon vanilla extract

1 cup whole wheat flour

2 tablespoons wheat germ

2 tablespoons bran

1 drop dōTERRA essential oil, Cinnamon

1/2 teaspoon baking powder

1/2 teaspoon baking soda

1 cup shredded zucchini

1/2 cup walnuts (optional)


Preheat oven to 350˚F. Butter an 8 1/2 x 4 1/2 inch loaf pan.

In a small bowl mix eggs, apple sauce, essential oil cinnamon, honey, and vanilla.

In a large bowl, combine flour, wheat germ, bran, cinnamon, baking powder, and baking soda. Add liquid ingredients and mix together. Blend in zucchini and raisins.

Pour batter into prepared loaf pan and bake for 45 minutes. Let cool.

Makes 1 loaf.

Enjoy this delicious bread! I just slice the bread and eat it like that, but honey drizzled on it would add a little more sweet to this recipe.
