Health Week and National Rice Month – Rice Pudding

Day 7 of Health Week! It’s our last day of Health Week.

Did you know September is National Rice Month? So today is a healthy rice recipe!

Todays recipe is… Original Brown Rice Pudding!

As you may already know, I love Rodale’s Basic Natural Foods Cookbook.

They have tons of recipes that I love. Here is just another adaptation I have made of their delicious recipe:

Ingredients:

1/2 cup uncooked organic brown rice

1 cup fine ground-up cashews

3 1/2 cups water

1/3 cup honey

1/4 teaspoon ground or grated nutmeg

1/3 cup rasins

1 drop cinnamon dōTERRA essential oil (I like mine to have cinnamon, this is optional)

Directions:

In top of a double boiler, combine rice, ground-up cashews, water, honey, and nutmeg.

Let it cook, covered, for 2 1/2 hours, or until rice is tender.

Stir occasionally.

During the last half hour of cooking, stir raisins into mixture.

Makes 5 to 6 servings

. I like to eat mine warm, but others like it cold.
